If the coffee flows too quickly and tastes watery or sharp, grind finer; if extraction is too long and the espresso is heavy or bitter, grind coarser. Do not shorten the yield too much: at 42 g the chocolate-nut base remains and apricot/nectarine show through.

1. 1.Always brew a full batch, as much as the moka pot is designed for.
2. 2.Pour preheated water into the lower chamber up to the valve level.
3. 3.Fill the filter basket with coffee and level the surface without pressing it down. Set the moka pot over medium heat.
4. 4.Take it off the heat just before extraction finishes, before the brew starts bubbling violently.

Use preheated water and remove the moka pot from the heat just before the end of extraction for a sweeter, less bitter coffee.
