El Urraco
Summary
El Urraco is a washed Honduran coffee from producer Javier Fernandez in Santa Bárbara, made from the Catuaí variety. Cherry is de-pulped the same day with no in-cherry resting or fermentation, then the parchment ferments in tanks for about 18 hours before washing; a thin layer of mucilage is left for drying, giving a white honey character. Drying begins on raised beds in covered houses and finishes on tarps over a concrete patio. Fruity-floral and sweet over a smooth hazelnut base, with notes of pear, honey and hazelnut.
