Nelson Fabio Cordoba produced this Pink Borbon coffee on his family farm Vegas del Chuscal in Vereda el Silencio, Palestina, Huila, Colombia at approximately 1950 metres above sea level. The coffee is processed with a 24-hour fermentation in polyweave bags, followed by depulping, 24-30 hour fermentation in a stainless steel tank, and mechanical washing. Flavour notes are refined and subtle with spiced honey and toffee sweetness, and juiciness of cumquat and white wine.
