The processing involves fermentation in cherry for 24 hours in bags, followed by 24 hours of low-oxygen fermentation in drums, then de-pulping and fermenting for 65-70 hours in drums or sealed bags. The profile is super juicy and sweet, with spiced cherry and cranberry notes.
