Grown at 1,900 masl, this coffee is of the Mejorado variety, a unique Bourbon cross-pollinated with an Ethiopian Landrace variety. Processing includes hand-picking at peak ripeness, floating to remove defects, overnight in-cherry holding, de-pulping, 36-hour dry fermentation, washing, and drying on raised beds to 10.5% moisture content.
