Hacienda La Esmeralda's Aguila Natural Anaerobic Geisha from the Boquete region of Panama is processed using the natural anaerobic method, where ripe cherries are sealed in oxygen-free tanks to enhance fruity and floral nuances before drying on raised beds. The coffee offers a vibrant cup with notes of blackberry, dark grapes, strawberry, and violet, complemented by tropical pineapple and delicate floral undertones. It has a medium body and balanced acidity. The Aguila plot is situated at elevations between 1,600 and 1,900 meters. The farm is Rainforest Alliance Certified and owned by the Peterson family, who gained international acclaim in 2004 when their Geisha won the Best of Panama competition.
