Summary
A single-origin light roast coffee from Colombian producer José Giraldo (Café 1959), grown in Acevedo, Huila at 1650 masl. The Pink Bourbon variety undergoes a carbonic maceration natural process: selectively picked ripe cherries undergo anaerobic fermentation during transport, followed by 108 hours of natural carbonic maceration in sealed tanks, then carefully sun dried. The cup is sweet, juicy, and winey with notes of ripe red raspberry, watermelon, and wine, and a floral aroma.
