Summary
A single origin coffee from Colombia, grown by producer Jonathan Delgado at Finca Buenos Aires in Bruselas, Pitalito, Huila at 1650-1750 masl. This Bourbon Sidra varietal undergoes a Natural Yeast anaerobic fermentation process where selected cherries with 24-26 brix are oxidized, washed, then fermented with Saccharomyces cerevisiae T58 yeast. The coffee is light roasted and presents tasting notes of tangerine, coriander, yellow peach, and guava, with a tart tangerine acidity, syrupy body, and mango-yellow peach sweetness with a lingering tropical fruit finish.
