Summary

Single-origin coffee from Finca El Diviso in Pitalito, Huila, Colombia, produced by Nestor Lasso. Grown at 1,750 metres above sea level on volcanic soils, the lot uses Castillo and Colombia varieties and an advanced washed process: hand-picked ripe cherries undergo oxidation, anaerobic fermentation and a final fermentation with must, then are mechanically dried below 38°C. Light roasted to preserve its delicate character, it offers vanilla, passion fruit and jasmine notes, making an elegant pour-over coffee.
