#0006 Colombia Nestor Lasso Papayo Advanced Natural
Summary
A rare Yellow Papayo variety from Nestor Lasso at Finca El Diviso in Pitalito, southern Huila, Colombia, grown at 1,750 masl. The coffee undergoes an advanced natural process: cherries selected at 24–28 Brix, floated, then 36 hours oxidising at around 25°C, 24 hours without oxygen at 16–18°C, another 24 hours of oxidation and 48 hours submerged with recirculation, followed by a 30-minute thermal shock at 50°C, partial drying to 18–20% moisture, rehydration and 50/50 mixing with fresh cherries before depulping, then dehumidifier drying and resting in black bags to a stable 11%. The cup is intensely fruity and complex with green apple, tropical fruit sweetness and a boozy spiced rum character.
