Summary
A limited edition coffee from Colombia's Huila region, produced by Rodrigo Sánchez Valencia at Finca Monteblanco. The farm is located in the village of La Tocora, Acevedo municipality, at 1730 masl with volcanic nitrogen-rich soils. The coffee is a blend of Caturra and Bourbon varieties, processed using Washed Carbonic Maceration. This involves a 70-hour CO2 injection fermentation in sealed plastic containers, followed by removal of fruit mucilage and a second anaerobic maceration phase, then washed and dried for 18-22 days. Flavour notes include raspberry, peach, and kombucha.
