Summary
A limited edition filter coffee from Colombia's Huila region, produced by Elkin Guzman at Finca El Mirador. The Tabi variety is processed using the Natural Thermal Shock method, beginning with 60 hours of anaerobic fermentation in plastic containers, followed by 60 hours in larger tanks with 35-40°C water to trigger oxidation, then a cold halt at 8 hours, and finally 18-24 days of drying. Flavour notes include grape, plum, and apple. Grown at 1550-1750 masl altitude.
