Summary
Colombia Chiroso from Finca Las Flores, cultivated by Jhoan Vergara in Acevedo, Huila at 1750 MASL. The rare Chiroso varietal is an Ethiopian Landrace mutation, also known as domesticated Geisha. Processed using anaerobic LAB fermentation: 48 hours oxidation, 80 hours anaerobic fermentation with yeast, then 36 hours submerged fermentation at 35°C inoculated with native microbes, followed by controlled drying to 11.5% moisture. The cup profile offers notes of mint, raspberry, strawberry jam, baked fruits, and custard with a creamy, juicy texture and buttery body.
