Nepal Sindhupalchowk Paachpokhari Koji is a single-origin coffee from smallholder farmers in the Sindhupalchowk mid-hills of Nepal, grown at 1300 MASL. The coffee consists of Bourbon and Caturra varieties. It undergoes an Anaerobic Natural process using Koji inoculates to catalyze the fermentation, with 36 hours of limited oxygen fermentation followed by raised-bed drying. Onyx roasts it to an ultra light level (Agtron #131) on a Stronghold S7 roaster. The cup score is 87, with flavor notes of mango, rhubarb, agave, and fruit punch.
