
Sonora Cascara
Summary
Sonora Cascara is a dried coffee cherry product from Hacienda Sonora farm in Grecia, Alajuela, Costa Rica. Produced by Diego Guardia, the farm sits at the foot of the Poas volcano and operates on 100% renewable energy. The cascara comes from naturally processed coffee cherries grown at 1,200-1,300 meters elevation. Varieties include Marsellesa and SL28. The cherries are hand-picked, sorted, washed, and dried on raised beds or patios with frequent turning. After drying, the fruit skin is removed from the beans and preserved as cascara. Flavour profile: Sultana, molasses, cherry. Brewing suggestion: 18g cascara steeped in 0.3L water at 92-96°C for 4 minutes.
