Sadayana is an anaerobic natural coffee from the highlands of West Java, Indonesia. Produced by the Sadayana cooperative, this lot represents the work of 191 smallholder farmers. Grown at 1400-1700 meters above sea level, the coffee is made from Ateng varieties. The process involves natural anaerobic fermentation in sealed barrels for 72 hours, followed by drying on raised beds and patios. The cup profile offers red grapes and papaya sweetness with a boozy touch, soft pomelo-like citrus freshness, and a creamy dark chocolate finish.
