From the highlands of West Java, this anaerobic natural lot from the Sadayana cooperative brings together careful smallholder production, precise fermentation, and slow drying. The cup is sweet and expressive with red grapes, a gentle boozy nuance, soft pomelo-like freshness, and a creamy dark-chocolate finish. Grown at 1400-1700 masl, varieties Ateng Ijo and Ateng Coklat benefit from rich volcanic soils. Processed via natural anaerobic fermentation in sealed barrels for 72 hours, then dried on raised beds and patios.
