This coffee comes from Finca El Matazano in the highlands of Honduras at 1,450 m.a.s.l., a 5-hectare farm shaded by diverse timber and fruit trees. Produced by Elvin Castillo, a 5 Star National Cupper and leader at CONEXH, the coffee is of the Lempira and Ihcafe 90 varieties. It is processed using the Anaerobic Natural method, developing sweetness, clarity and complexity. The cup profile features notes of dried fig, apricot, and cream.
