Summary
Koke Indigo is a specialty coffee from Ethiopia's Yirgacheffe region, processed at the Koke Washing Station and exported by Primrose Coffee. The coffee is made from Heirloom varieties grown at 1800-2000 meters elevation. It undergoes Carbonic Maceration Natural processing, where whole coffee cherries are fermented in sealed tanks saturated with carbon dioxide, then dried naturally on raised beds. This results in a bright and exotic sensory profile with notes of apricots, peaches, pineapple, mango, and green tea, featuring a medium body, medium acidity, and high sweetness.
