Summary
A single-origin specialty coffee from Panama, grown on Iris Estate farm in the Boquete, Volcán region at 1850-2300m altitude. Produced by Jamison Savage and Sasa Sestic. The Geisha variety is processed using Carbonic Maceration Natural Symmetry, a controlled fermentation method where cherries are fermented in sealed stainless steel tanks for over 100 hours with CO2 injection, resulting in an extraordinarily complex profile with floral, cherry, papaya, and peach notes, medium acidity, medium body, and high sweetness. Roasted as an omniroast profile by World Vice Champion roaster Bogdan Georgescu.
