The Geisha variety is processed using Carbonic Maceration Natural Symmetry, a controlled fermentation method where cherries are fermented in sealed stainless steel tanks for over 100 hours with CO2 injection, resulting in an extraordinarily complex profile with floral, cherry, papaya, and peach notes, medium acidity, medium body, and high sweetness.
