El Paraiso- Letty Bermudez - Thermal Shock Gesha
Summary
Gesha variety coffee from El Paraiso in the Cauca region of Colombia, produced by Letty Bermudez. The Geisha adapted to Cauca develops a delicate, citric and aromatic profile thanks to the climate, altitude, terroir and intense rains. Cherries are harvested at optimum ripeness with high sugar concentration in the mucilage, depulped and fermented in wet processing with tropical yeast to boost fruity flavour, then washed with thermal shock and dried in a dehumidifier to preserve soft notes and prevent over-oxidation and overfermentation. Cup shows jammy rose, jasmine and orange blossom, candied citric tones, lavender syrup, grape gummies, peach soda, rose milk tea, peachy candies, coconut jellies and saffron-pistachio ice cream.
