The coffee is selectively hand-picked at high Brix levels and undergoes a cold fermentation without skin contact in sealed GrainPro bags at 10-14°C for 76 hours, followed by careful washing and drying. The variety is Bourbon Sidra, a cross between Typica and Bourbon, known for its fruity and winey profile. Flavor notes include floral, silky mouthfeel with watermelon, raspberry, and white chocolate. Roasted light for filter brewing.
