[premium]ecuador Leopoldo Andrade
Summary
A Typica Mejorado from Leopoldo Andrade's La Josefina farm in El Chaco, Napo, Ecuador, grown at 1,500 m near the Amazon gateway. Genetic analysis links this variety more closely to Ethiopian varieties than to common Typica. Processing combines honey with anaerobic fermentation: whole cherries undergo 120 hours anaerobic, are depulped, then 96 hours more anaerobic, followed by 24 hours aerobic and slow drying on African beds for about 15 days. Flavour notes of green apple, red berry, papaya, pear cider and jasmine, with floral aromas and a luscious, sparkling sweetness.
