El Salvador Don Jaime
Summary
Single-origin coffee from Finca Don Jaime in San Ignacio, Chalatenango, El Salvador, produced by Jaime Guevara at 1,400-1,500 m. The Pacas variety is processed as a Natural, with cherries dried slowly on African beds over roughly 35 days after floating to remove floaters. The cup shows floral aromas, plum-like acidity, passion fruit, prune, a gentle boiled-peanut sweetness and chocolate, with a clean fermentation character and soft texture. Roasted medium-light and served as espresso at Kurasu cafes, it also works well with milk.
