Nintai (忍耐) Gesha Symbiotic Process - Hachi Project (symbiotic Process)
Summary
A washed Gesha from Jurutungo Farm in Panama, grown at 2000–2200 meters. Nintai applies Hachi's Symbiotic Process: the pulped coffee is submerged in the active fermentation liquor from a Natural Gesha, absorbing esters, volatiles, and floral precursors while preserving structural clarity. After 36 hours in this controlled medium, the coffee is gently washed and dried slowly in a dark-room dehumidification chamber. Flavour notes include bergamot, peach, rose tea, and red berries.
