Summary
A rare micro-lot from El Diviso farm in Pitalito, Huila, Colombia, produced by Néstor & Adrián Lasso, Jhoan Vergara, and Cata Export. This Ombligon varietal undergoes an intricate 'Advance Natural' fermentation with distinct oxidation phases, anaerobic environments, a 50°C thermal shock, and a 50/50 fresh and rehydrated cherry blend, dried in total darkness. The cup is exceptionally clean yet complex, with notes of Hubba Bubba bubblegum, Reine Claude plum, and Kombucha. It has won first place at the Irish Brewers Cup.
