Ranitas – Espresso
Summary
Ranitas is a single-origin coffee from Finca San Francisco in the Apaneca-Ilamatepec region of El Salvador, produced by Andrés Salaverría, fifth generation of a family dedicated to coffee growing. The Tabi variety is grown at 1,600 m under native shade. It undergoes an anaerobic honey process: the coffee is fermented in cherry, then pulped and dried on impermeable tarps that are opened and closed to prolong drying and develop complex, elegant flavours. The cup is clean and sweet with notes of red cherry, redcurrant, hazelnut liqueur and aromatic herbs, a vinous and floral violet aroma, creamy body and complex, elegant acidity.
