Summary
Vayichil is a naturally decaffeinated coffee from Jaltenango, Chiapas, Mexico, produced by several small farmers organized under La Tribu, a producer organization supported by Bean Voyage, with 65 women producers leading the effort. The coffee is grown at 1650-1800 masl, featuring Bourbon and Peñazco varieties. It undergoes a Mountain Water decaffeination process (Special Process - Raised Beds), a chemical-free method using pure water from Pico de Orizaba. The cup profile offers notes of almond, milk chocolate, caramel, and roasted pineapple, with a smooth, balanced, and sweet character.
