Ethiopia, Bishan Wate - Espresso
Summary
A washed, special-prep Grade 1 lot from the Bishan Wate washing station in Guji, Ethiopia, roasted lightly for espresso. It offers blueberry, peach iced tea, and ripe prune notes, with dried apricot, panela, and soft toffee emerging as it opens. Bright, tea-like acidity and a long, sweet finish. The coffee comes from around fifty smallholders farming at elevation in Guji's red soils, with meticulous selection and a 48-hour fermentation before slow drying on raised beds.
