Ethiopia - Bensa Ayla
Summary
A natural Ethiopian coffee from the Ayla processing station in the Bombe area, Bensa district of the Sidama region. Around 725 smallholder farmers from the surrounding Shentawane area deliver ripe cherry from farms at 1,950–2,150 metres, planted mainly to the 74110 and 74158 varieties selected by the Jimma Agricultural Research Centre. Cherry is sorted, density-separated in a water bath and dried on raised African beds for 15–21 days. Roasted for filter, with notes of blackcurrant, white chocolate and pansies.
