Zambia Sunzu

Summary

Specialty coffee from Mount Sunzu Coffee, grown near Mount Sunzu in Mbala, northern Zambia at 1600 metres above sea level. Ripe cherries are selectively picked, floated, pulped and dry fermented for 24 hours in 1000-litre tanks with naturally occurring yeast and bacteria, then dried on raised beds for 10 days before hulling, grading and hand sorting at the farm's own wet and dry mill. Washed process. Flavour notes of brown sugar, cocoa and orange. Roasted light/medium and suited to both filter and espresso.
