Colombia | Jairo Arcilla – Santa Monica, Tabi – Washed (espresso)
Summary
A washed Tabi lot from Jairo Arcila's Santa Mónica farm above Armenia, Quindío, Colombia. Tabi is a Colombian cross of Timor Hybrid, Bourbon and Typica, grown tall and slow on volcanic ash soil. Cherries are picked to strict ripeness, carried in GrainPro to the family's La Pradera mill, hand-sorted and floated, then given thirty hours of underwater fermentation, pulped, washed and dried on raised beds over twelve days. The cup is syrupy sweet with peach nectar and orange, and grape lingering underneath.
