Processed using an anaerobic washed method with thermal shock: 24hr cherry oxidation, depulping, 18hr dry oxidation, hot 45°C thermal shock wash, 36hr controlled fermentation with yeast culture, cool 5°C wash, and 76hr mechanical drying at 38°C.
