Summary
From Edinson Argote's Finca Quebraditas in Huila, Colombia, this rare Laurina variety (a natural mutation of Bourbon with lower caffeine content) is grown at 1850m. Processed using an anaerobic washed method with thermal shock: 24hr cherry oxidation, depulping, 18hr dry oxidation, hot 45°C thermal shock wash, 36hr controlled fermentation with yeast culture, cool 5°C wash, and 76hr mechanical drying at 38°C. Tasting notes of creamy mango and pineapple with a light, creamy texture. Roasted light for filter brewing.
