
Honduras El Pedrero - Washed Process Pink Bourbon
Summary
Single-origin washed Pink Bourbon from Finca El Pedrero in Tierra Colorada, La Paz, Honduras, grown at 1,780 masl by Carlos Ernelio Ortiz (Don Nelo) and his family. Hand-picked cherries are depulped, fermented 8–12 hours in concrete tanks, washed, and slow-dried on patios for 10–13 days. Light roast with notes of orange honey cake, powdered sugar, soft citrus, and Kinder Bueno.

Grind: Medium-fine
- 1.Bloom with 2–3x coffee weight (45–60g for 21.5g dose).
- 2.Wait for the 60-second bloom. (1:00)
- 3.Perform 2–3 controlled center-out pours.
- 4.Avoid heavy swirling or stirring.
- 5.Let it draw down naturally with a light rattle after the last pour.
Use soft water (30–80 ppm, moderate alkalinity, balanced calcium/magnesium). Aim for extraction yield 20–23%, TDS 1.35–1.55.
