Summary
Single-origin coffee from Santa María Yucuhiti, Oaxaca, Mexico, produced by Honorato Aparicio at Finca Tierra Roja. Grown at approximately 1,350–1,375 masl. Varieties: Pluma and Bourbon. Washed process with 18–24 hour fermentation and patio drying. Light roast with tasting notes of watermelon, muddled berry, cinnamon sugar, and chocolate.

Rest 4–6 weeks off roast. Adjust based on roast level and density. If thin, grind finer or increase ratio; if harsh, coarsen or lower temp.

Aim for extraction yield 20–23%, TDS 1.35–1.55. Water: 30–80 ppm, moderate alkalinity, balanced calcium/magnesium. Rest 2–6 weeks off roast, sweet spot 3.5–6 weeks.
