Summary

Single-origin Colombian coffee from producer Diego Horta at Finca el Rincón in Santa María, Huila. Diego is a third-generation producer who took over the farm in 2018 and focuses on specialty lots and exotic processes. This lot is a Honey process: two days of fermentation with the fruit and skin intact, then de-pulping with the mucilage layer left fully intact, followed by slow drying on raised African beds in greenhouses under controlled ventilation. Varieties are Caturra, Castillo and Colombia, grown at 1,560-1,710 masl. Tasting notes of watermelon, passionfruit and strawberry.
