Summary
Single-origin specialty coffee from Finca Santa Monica, produced by third-generation grower Jairo Arcila in Quindio, Colombia. This lot is 100% Castillo variety, grown at 1500 masl, and processed as a honey with wine yeast and strawberry co-fermentation: a 72-hour dry anaerobic fermentation with the pulp on, followed by drying on raised beds with ripe strawberry placed amongst the coffee. Light roast. Balanced, fruit-forward, juicy and sweet, with tasting notes of strawberries, jam, sweet candy, floral and sweet citrus. Available as whole bean or various grind options in an 8 oz (227 g) bag.
