Colombia - Aroma Nativo, Pink Bourbon | Double Fermented Honey
Summary
A wild and deep Pink Bourbon from Colombia, processed by Aroma Nativo, a project founded by Luis Marcelino to support high-quality producers. Grown at 1600-1700 masl in Huila, Acevedo. The coffee undergoes a double fermentation process: anaerobic fermentation before pulping, followed by a second fermentation in mucilage with native bacteria and selected yeast strains. Dried on raised beds for 15 days, then stabilized for 2 months. Flavour notes of melon, guava, and magnolia. Light roast, suitable for filter brewing and equally enjoyable with milk.
