A rare micro-lot from Finca Soledad in Ecuador's remote Intag Valley, cultivated by Jose Ignacio "Pepe" Jijón, a Sprudge 2023 Notable Coffee Producer. This Sidra variety was harvested by Pepe, Monique, and Jose in December, processed with a two-day low-temperature rest, two days in mucilage, a fully washed finish, and a slow 24-day shade dry. The cup is clean and dynamic with punchy tropical acidity, layered sweetness, and a silky, elegant finish, offering notes of kiwi, persimmon, apricot, and vanilla.
