S.anna By Bányai Pacamara
Summary
Single-origin Costa Rican coffee from Finca S.Anna, grown by Bányai. The Pacamara variety, developed from a cross of Pacas and Maragogipe and descended from the El Salvador Coffee Research Institute's stock, is cultivated at the top of the estate. Processed using a Bioprotective mermelada method: first depulped as black honey, then fermented with organic lactobacillus to lower pH naturally, followed by 96 hours of fermentation with wild yeasts selected from the estate in controlled stainless steel tanks. The cup shows a beautifully full body with raspberry, granadilla and black blueberry, elegant floral notes, molasses sweetness and a dignified acidity.
