Indonesia Sesongot is a speciality coffee from the Gayo region of Sumatra, Indonesia, produced by Aulia Kahfi of Rakyat Farm. Aulia inherited the farm from his family and shifted production from commodity to speciality grade, also purchasing and processing coffee from nearby farmers in a small cooperative model. Named after a native caterpillar, this lot is processed using an anaerobic natural method: ripest cherries are fermented in water for 24 hours (water changed at 12 hours), then dried on patios for about 6 days before the dried fruit is removed. The process yields sweet, complex flavours with bright strawberry and cherry notes, a chocolatey and spicy body, and a sharpness from slight fermentation. Expect chocolate cake and strawberry jam in milk-based drinks, bright fruits in filter, and fuller body as espresso. Varieties include Abyssinia, Ateng, Caturra, Gayo, Timtim and Typica. Grown at 1300-1600 metres.
