A single-origin coffee from Peru, grown by Rosalía Pérez at El Cedro in the Cajamarca region at 1900 masl. This Bourbon variety is washed processed and lightly roasted. It offers a complex flavour profile with notes of sparkling apple, dark forest berries, and dark caramel, which divided the roastery's opinion. Suitable for both filter and espresso brewing methods depending on the desired extraction profile.
