El Carmen Anaerobic Natural Orange Bourbon, El Salvador
Summary
This coffee comes from El Carmen Estate in the Apaneca-Ilamatepec mountain range of El Salvador, farmed by the Alfaro family for over a century. It is produced from Orange Bourbon, a natural mutation of Red Bourbon, grown under shade. The cherries are hand-picked and undergo an anaerobic natural process: fermented in sealed containers with water and mountain microorganisms for 192 hours, then dried on raised beds for 25-30 days. Expect tasting notes of passion fruit, winey, and marshmallow.
