Filter Roaster's Jam
Summary
A Tabi variety coffee from the Sigilo farm in Quindío, Colombia, sourced in partnership with Col-Spirit. Sigilo is dedicated to sustainable cultivation and supports more than 150 families in the Quindío and Norte del Valle regions. The cherries are hand-selected, floated to remove less-dense fruit, then fermented for 72 hours in sealed, oxygen-free vats for carbonic maceration, producing a distinctive and complex cup. Roasted for filter, it tastes of black tea, tropical fruits and prunes.
