Summary
Castelgazzo is a washed coffee from El Salvador, produced by Mario and La Geña Cristiani at Finca Castelgazzo in the Santa Ana region. The coffee undergoes a 72-hour fermentation for enhanced clarity and complexity, then is slowly dried on raised beds under covered structures. It features a Pacamara variety grown at 1450-1780 masl in the buffer zone of Montecristo National Park. Flavour notes include dried fruits, black plum, and milk caramel. Suggested for espresso preparation.
