
Santa Clara
Summary
Santa Clara is a washed specialty coffee from Finca Santa Clara in the Antigua Valley of Guatemala, produced by fourth-generation farmer Ricardo Zelaya. Grown at 1,650–1,700 metres on the slopes of Volcán de Agua, it features Caturra and Bourbon varieties. The traditional washed process includes fermentation and slow drying on African beds in a greenhouse over about 21 days. The cup is balanced with notes of maple syrup, malt, and soft yellow fruit, with a clean finish and delicate citric acidity. Suitable for both filter and espresso.
