It undergoes a 72-hour anaerobic maceration in cherry followed by natural drying. The cup has bright tropical fruit acidity with notes of red currants, plum, candied fruits and red grapes, and a clean, balanced body suited for espresso, moka pot, French press, Aeropress and cold brew.
