Blue Ayarza
Summary
Blue Ayarza comes from the Ayarza region in Santa Rosa, Guatemala, grown between 1,400 and 2,000 metres near the volcanic Laguna de Ayarza. Produced by smallholder farmers with Olam Guatemala, including Arnaldo López, the lot combines Anacafé 14, Bourbon, Catuaí, Pache and San Ramón varieties. Cherries are processed as Natural, dried in thin layers in neighbouring Amatitlán and finished in a mechanical dryer. The cup is fruity and expressive with blackberry, blueberry, loquat and milk chocolate, medium body and medium acidity. Omni roast suited to both filter and espresso.
