Producer Jamison Savage uses a proprietary Horizon process: a hybrid yeast fermentation where perfectly ripe cherries are inoculated with yeast and sealed in tanks for over 100 hours before being pulped and dried on raised African beds. The cup profile reveals mango, orange, and clementine when warm, transitioning to green apple, jasmine, and lilac as it cools, with a velvety body and sparkling acidity.
