Summary

Panama, Ethiopia and Colombia · mostly washed and natural lots

Substance Café is a tiny specialty coffee roastery and cafe in Paris, where sole barista-roaster Joachim has been perfecting ultra-light roasts for eight years. No takeaway cups, no sugar, no pastries, no music — just coffee served slowly at the bar, so you can actually taste the terroir. Joachim roasts on a Loring S7 in the shop's own workshop, keeping volumes small and quality laser-focused. His ultra-light style was ahead of its time when he started, and it's still the whole point: preserving what makes each origin unique. You can buy their single-origin beans and brewing gear from the shop's shelves. Due to demand, the bar experience is now reservation-only — a sign that Parisians have caught on.
